Our Winemaking Philosophy
Prince Vineyards’ primary goal is to produce some of the finest Bordeaux style wine in Napa Valley. We achieve this through our thoughtful approach to winemaking. The beginning of this process starts well before harvest. However, knowing when to harvest is the responsibility of our highly talented vineyard management and winemaking team. Warm weather will typically speed up ripening, in contrast to cooler weather which can delay harvest. Ultimately our decision to harvest is based on multiple grape cluster tastings to ensure optimal sugar level and flavor profile – an art in itself. Only when our Brix, pH, and Acid levels are acceptable do we begin the long day of harvest. Excitement is always in the air! An early morning pick ensures that all fruit is properly chilled for the short tractor drive down the hill to the winery. Here we gently destem all grapes to begin the cold soak process. Multiple punch downs are performed to keep the grape juice in constant contact with the grape skins. This flavor and color extraction imparts a beautiful richness to our wine. We then inoculate the grape bins with high quality, hand-selected live yeast to begin the fermentation process. Aging is an important element in the winemaking process. Our French oak barrels are sourced from top Bordeaux cooperages and are selected based upon their unique wood character. With great patience comes bottling day! This truly is the culmination of great preparation by dozens of highly qualified individuals. We use the best French glass and sustainable Portuguese cork available to embrace the aging process. It is also comforting to know that our wine will easily age for twenty years or more. The ultimate goal for Prince Vineyards is to ensure each tasting experience is memorable, magical, and enjoyable.
